A Taste of Summertime | Grilled Fish Tacos + Sangria

The Bachelorette is back on, and so are our weekly Monday night celebrations, cooking up delicious bites and sipping glasses of wine. This season we are soaking up the summer fever, and featuring menu items that take full advantage of the fresh produce, cold cocktails, and grilling weather. To kick it off, we featured Grilled Mahi Mahi Tacos with a Lime-Cilantro Slaw accompanied with a fresh pitcher of Fruity White Wine Sangria.

Main Dish | Grilled Mahi Mahi Tacos + Lime-Cilantro Slaw
Grilling is perfect for a quick and easy dinner that adds that signature summer flavor to any dish. We tried a spin on the traditional taco, grilling up some Mahi Mahi and chicken breasts. After they were ready to go, we tossed both corn and flour tortillas on the grill to give them that extra crisp. A bold, lime-cilantro slaw topped off the tacos along with some fresh avocado slices. Serve with chips and your favorite salsa (we chose Pace's Citrus Pineapple Salsa).

Signature Sip | White Peach Sangria
To accompany the meal, we mixed up our own signature White Peach Sangria combining fresh fruits, Pinot Grigio and Peach Schnapps. Sangria is a great refreshing drink choice for the summer, and allows you to use your own creativity when making it. Try using red wine for a different flavor.

1 bottle Pinot Grigio or Sauvignon Blanc
1/4 cup Peach Schnapps
Splash of Blood Orange Syrup
Strawberries, Raspberries, Peaches, Apples


Dessert | Fruit Salsa + Baked Cinnamon Crisps
Summer is the season of light, fruity desserts..and also watching the waistline. We combined a variety of chopped fruits with strawberry preserves and freshly picked mint leaves, and served with Baked Cinnamon Tortillas right out of the oven.

1 granny smith apple
1 lemon
1 kiwi
1 lb strawberries
2 clementines
Strawberry Preserves
Cinnamon & Sugar

Combine fruit and strawberry preserves. Preheat oven to 350 degrees. Spray tortillas with cooking spray or brush with butter, and sprinkle with cinnamon & sugar. Slice tortillas into wedges with a pizza cutter and bake 10-12 minutes.
