We held a simple Super Bowl gathering for the big game last Sunday. We opted for traditional, "man-friendly" appetizers to please our guest list (which just so happened to be predominantly male). Even though football is over for the season, the menu for this party and these recipes could be carried over to any sports-related gathering (any Olympics, basketball or hockey fans?). A simple nacho bar offered queso, fresh sweet peppers, pickled jalapeños, diced tomatoes, sliced green onions, guacamole, Black Bean & Corn Salsa, and Lime Salsa.
Salted soft pretzels were accompanied by a simple beer cheese fondue.
We made simple buffalo chicken wonton cups, filled with buffalo sauce, shredded chicken breast (tip: we used a rotisserie chicken to simply the recipe), cream cheese, and cheddar cheese. This is an easy way to incorporate buffalo wings into your menu without dealing with the hassle or mess of preparing chicken wings.
For dessert, we baked a batch of chocolate cupcakes and decorated some with the simple sport motif of Xs and Os. For the remainder, we topped with chocolate-dipped potato chips to get that sweet and salty flavor.
We hosted team signature cocktails for each team. For the Seahawks, fans mixed up an Emerald City - Malibu Rum, Midori, Blue Curacao and a splash of 7up and sweet & sour mix. Broncos fans enjoyed a Bronco Mule, garnished with an orange - inspired by the Moscow Mule (vodka, lime juice and ginger beer).
