Juanuary: Week 2

Juan Pablo has continued winning over hearts, and our Monday evenings, for a second week. This week's viewing party was Thai-themed and featured Pad Thai, Baked Crab Rangoon, and a refreshing dessert. Centering our Monday’s around a particular cuisine or theme gives the evening a little more spice, focus, and is the perfect opportunity to make unique recipes not in our normal weekly menus. Thai cuisine is not the quickest, nor the easiest, to whip up after a day at work. However, with some simple planning we made an authentic meal in under 2 hours. Pad Thai is one of our Thai restaurant favorites, and we recreated our own flavorful, satisfying version in our own kitchen. With many steps involved, the key ingredients included rice noodles, seasoned chicken, cilantro, lime and the flavorful Asian sauce. Addition of Sriracha sauce was the signature ingredient though that completed the dish.

Sriracha was also used for our Baked Crab Rangoons. A spin on traditional crab rangoons, these are a healthier option with reduced-fat cream cheese, light mayonnaise, and lump crab meat. Serve as an appetizer, or right along with the meal. These are aesthetically pleasing, easy to prepare ahead of time, and would be perfect for any occasion.

We paired a simple Chardonnay with the meal, to complement but not overpower the mix of bold flavors. After taking a spicy bite of Pad Thai, the crisp, white wine was a refreshing delight. For dessert, we served a Pinot Noir with a rich, yet light, ice cream dish. On top of vanilla bean ice cream, we drizzled caramel, added crushed cashews, and garnished with fresh mint.
