We love avocados, and we also love hummus. So why not combine the two for a delicious and simple appetizer? This hummus is tasty, flavorful and healthy, perfect for an impromptu girls' night in or a family summer picnic.
- 1 15 oz. can garbanzo beans, drained
- 2 ripe avocados
- 1 small lemon, juiced
- 2 cloves of garlic, freshly minced or chopped
- 1 tsp sea salt
- 1 tbsp fresh parsley
- Olive oil, as needed
Combine garbanzo beans, diced avocados, lemon juice, garlic, sea salt and parsley in food processor. Blend until coarse. Add a splash of olive oil and puree until smooth. Serve with pita chips, tortilla chips or your favorite veggies.
